FORAGING AND WILD GASTRONOMY

Bringing together two amazing experts, Lisa Cutcliffe and Chef Rob Green on our new  Wild Gastronomy Course, we are offering one of our most exciting courses to date.

Wild food specialist Lisa Cutcliffe loves incorporating delicious edible fruits, plants, meats and fungi from nature’s larder into her everyday meals. She’s been foraging for over a decade and runs courses across the UK from urban parks to rugged seashores. According to Lisa, “this isn’t survival; this is wild gastronomy and a lost art,” one she is actively bringing back to life. 

“There’s so many exciting and unusual flavours, textures and excellent nutrition awaiting us just outside our front doors that you can’t buy in the shops, and all growing without pesticides and artificial fertilisers. What more wonderful a way to engage with the rich diversity around us than to bring some of its bounties into our kitchens?”

She will be using the larder here, on Carlton Tower’s estate.

Together with Lisa, the day will begin exploring the bounty that is right here on our doorstep. That could be in the parkland, the woods, down by the lake, in the garden or the vineyard. Only nature can determine where the exploration will take place. Wherever that may be, either you will walk, or we will provide the necessary transportation.  Alongside Lisa, you will identify, and where appropriate, taste what is out there. 

Warm drinks will be served at the Shoot Lodge in the woods (weather permitting), and once baskets are filled, it is back to the kitchen and the Wild Gastronomy with Rob Green. You will spend the rest of the day with Rob preparing and cook several dishes using wild produce including ingredients found on the forage.

BY THE END OF THE COURSE

You will leave Cooks with an understanding of wild foods and foraging, and the confidence to prepare and cook a range of dishes using wild foods.  All dishes are prepared from scratch and include a range of essential skills.

As this course is dependent on both the weather throughout the late summer and autumn, dishes to be cooked will be decided nearer the time.

Guests should aim to arrive for refreshments at 9.30am; the class will begin at 10.00 am and ends around 4 pm.
