Learn How To Smoke with Chef Lionel Strub

Bang on trend now is the centuries-old craft of smoking food. Smoking food is not only a method of preserving food, it also adds both flavour and texture. Guiding you through just how easy it is to smoke meats, fish, cheese and other ingredients is Cooks favourite, Chef Lionel Strub. Lionel will also give advice on where and what to buy, or if you are so inclined, show you how to create a simple smoker at home or buy one for for less than £30.

As a classically trained chef, Lionel spent three years at two Michelin-starred Le Restaurant des Vannes in Liverdun after graduating from the École Hôtelière de Strasbourg. Yorkshire’s favourite French chef settled in Britain 25 years ago. After several years as chef-patron at the highly acclaimed Mirabelle Restaurant in Harrogate, in 2015 Lionel moved to the heart of the Yorkshire Dales and you will find him and his cooking at The Clarendon at Hebden near Grassington.

The class is a mixture of hands-on cooking and demonstration. We do all the washing up, and all you have to do is come and have fun. There will be no more than twelve** in the class, and every student will have a workstation space.

You will enjoy this course if you want to make your own smoker (or learn how to use one you own) and learn the techniques of smoking several different foods and recreate those foods at home, then this is the course for you.


You will leave Cooks with the skills to confidently choose sawdust and chippings such as Apple wood, Oak, Cherry tree, Orange tree. Learn how to prepare smoke a range of foods; Trout, Breast of pheasant, Garlic, Carrots. And, how to create a simple smoker at home or buy one for under £30.

Guests should aim to arrive for refreshments at 9.30am; the class will begin at 10.00 am and ends around 1 pm.
